S: Home Sweet Home

Pickle, Phnee and I are part of an animal rights group that's having an event tomorrow which, naturally, requires delicious baked goods. To start out with, this is what I came home to today:




Lovely Cookies n' Cream cupcakes (from Vegan Cupcakes Take Over the World, hereafter referred to as VCTOTW) made by miss pickle and my housemate! Pickle can tell you more about them.


My first contribution is these lovely Chocolate Almond Explosion cookies from Vive le Vegan. I love Dreena Burton's baked goods - they are pretty healthy, without excessive amounts of oil or sugar, often sweetened with maple or brown rice syrup, and with plenty of wheat-free options.






Obivously, I had to test one, and they are indeed scrumptious: kind of like a brownie but crispy on the outside and with a delightful almond crunch!

Oooh, and in other news, I bought my very first bottle of peppermint extract today! I don't know why I've been holding out for all these years! Hopefully now I can make up for lost time.






I made the Peppermint Carob Chip Oatmeal cookies from ExtraVeganZa, and subbed chocolate chips for carob in the recipe (simply because I love carob so much and wanted to save my chips for myself - I'm so greedy!). They are made with spelt flour and maple syrup. I am a big fan of spelt these days.
