Not sure what to do this weekend? Why not throw your very own fondue party?
Us three and some of our friends did just that last Friday. The result was greater than our wildest fondue dreams.
Our main course was the "cheese" fondue, made with a simple but delicious recipe based on nutritional yeast. I don't have that recipe, but here is another one that you can spice to your liking:
1/2 cup cooked carrots
one 12oz. pack silken firm tofu
1/4 cup nutritional yeast
one 12oz. pack silken firm tofu
1/4 cup nutritional yeast
1/4 tsp dry mustard
1 Tbsp miso
1 tsp. lemon juice
3/4 tsp salt
pinch pepper and nutmeg
Puree until smooth. Heat on medium, stirring frequently.
To make this a full meal, we dipped a variety of things: chopped veggies, veggie "sausage", TVP, polenta, bread, pretzels...
For dessert (eaten simultaneously with supper), we of course had chocolate fondue, with a variety of fruits for dipping. But the showstopper was defintiely this impressive dish brought by our friend Jen:

Hey, I thought I would post the "cheese" and chocolate fondue recipe that I used for this amazing event.
"Cheese" Fondue
1/2 Cup Nutritional Yest
2 tbsp Flour
Salt (add to taste, I like a lot, but I also use sea salt which isn't as intense as table salt. Add at least 1/2 tsp.)
1 Cup Water (This is good to start, but make sure you get the consistency you want. I ended up leaving the sauce on the stove for a little and it became too thick, I added some soy milk to it and that helped. You could probably add half water, half soy milk if you wanted to try and make this creamier.)
Oil (At least 2 tsp, but I put more. You can also add melted Vegan Gourmet cheese if you'd like.)
1 1/2 tsp Dijon (or more, do what tastes best)
1 1/2 tsp Tamari or Braggs (or more)
1 tsp Garlic Powder (I used some garlic powder to try and get the "nippy" taste, but you don't have to)
Directions: Put it all in a pot and bring it to a boil and simmer until the consistency is how you want it (probably around 5 minutes). This will make about 1 1/2 cups, and is about enough fondue for 4 people.

Chocolate Fondue
This actually isn't a recipe in the strictest sense, but more a guide. I used some dark chocolate, maybe a cup, and melted it with some Earth Balance (Vegan, salted margarine. If you have none, you could use some oil and a pinch of salt, but I am not sure how that would turn out), maybe a tbsp or 2, in a sauce pan. After it was all melted I just started adding soy milk ( I am not sure how much it was, maybe a cup?) until it was the consistency I wanted, which was when the chocolate was viscous enough that it barely dripped off my stirring utensil, but wasn't watery. Make sure you are stirring constantly and are at low to mid heat. This made enough for 6 people I think, but I also am not sure how much it actually made, so I wouldn't trust myself.
I'm bookmarking this blog! I will use it to help the transition from vegetarian to vegan.
Just tonight I watched "Earthlings" on google video. The images are really shocking -- but we need to be reminded of the atrocity our society is committing on an ongoing basis.
