For a while, I've felt like I was pretty much "over" tofu. All that changed tonight, when I made the Lemon Herb Tofu from Vive le Vegan. I don't know how something so simple could be so delicious, but this ended up being one of the best suppers I've had all week. Tonight's dinner was very simple and wholesome.

Lately I have been obsessed with the Garilic Roasted Brussels Sprouts from VwaV. The combination of brussels sprouts, sea salt, olive oil, and garlic is just magical. I also had a slice of Ezekiel sprouted grain bread (delicious and healthy, with 25% of your RDA of iron in one slice!) with my favourite toast combination: tahini and miso. Mmm! It was so good, I forgot about my fennel-less-ness.
