Baking Therapy


Today was one of those days where alternated between feeling: incredibly irritated, on the verge of tears for no apparent reason, and overflowing with goodwill to all. I decided to stick with the latter emotion and did some baking for my coworkers!




First, I made "The Best Pumpkin Muffins" from Vegan with a Vengeance. I love Isa's recipes, but find that they make huge amounts, so I generally use them when baking for others. I thought that the sugar in the recipe was a bit excessive, so I reduced it from 1 - 1/4 cups to 3/4 cup. I hope they're still yummy!

Also, I think something should be said about silicone muffin tin liners. I've read mixed reviews on these, but having used them a couple of times, I'm a convert! They're a bit of extra work, what with having to wash them after use, but muffins/cupcakes just pop out of them, and that avoids the most unsavory accidental paper-eating that often ensues when paper liners stick.



Tonight's baking rekindled in me a forgotten love of all things pumpkin! I don't know if anyone actually reads this blog yet, but any ideas as to what to do with about 3 cups of leftover pumpkin puree would be most welcome!

Second, I made some oatmeal-raisin cookies, using a recipe that my lovely friend Rosanna shared with me. When she made them for a potluck, they were so good that I had about 5. My attempt at them was a diasater! They tasted pretty good, but completely feel apart on the cookie sheet. Ah well, I guess now I've got some yummy granola for breakfast!

Aak - I've had similar problems with oatmeal raisin cookies before. Even the "Dolce Vegan" recipe, which is usually trustworthy, has failed me in the past. Hmm...a tasty mystery, indeed!

Three cups of pumpkin - freeze it for making more muffins, or puree it in a soup. OR make the pumpkin cookies from VWV.
